Chipotle Lime Chicken Kabobs with Avocado Cream Sauce


Ingredients

Chicken:

2 tbsp/30 mL Watkins Chipotle Lime Gourmet Seasoning

1 tsp/5 mL kosher salt

1 tbsp/15 mL brown sugar

3/4 cup/180 mL vegetable oil

2 lbs/900 g chicken breasts cut into 1½-2 inch/3.75-5 cm pieces

 

Avocado cream sauce:

1 avocado, split and pitted

1/2 cup/125 mL low-fat greek yogurt

1 clove garlic, minced

Juice of 1 lime

1/2 tsp/2.5 mL Watkins Chipotle Lime Gourmet Seasoning

Salt and pepper, to taste

Directions

In a medium bowl, whisk together spice, salt, sugar and oil. Add chicken pieces to mixture and mix to coat well. Cover, refrigerate, and let marinate for 30-60 minutes. Meanwhile, heat a grill to medium-high and oil the grates. Soak wooden skewers in water to prevent charring/burning.

After marinating, thread chicken onto pre-soaked skewers. Dispose of the excess marinade. Place kabobs on the grill and let cook, turning until all sides are slightly browned and the internal temperature registers 160˚F/71˚ C. Remove to a plate and let rest  5-10 minutes.

Avocado Cream Sauce: Combine the avocado, yogurt, garlic and lime juice in food processor or blender. Blend until smooth. Season to taste with salt and pepper. Serve alongside kabobs for dipping.
